Add Some Color to Your Diet

If you’re like me, you hate it when the produce you buy goes bad before you can use it. It’s frustrating as it’s expensive and wasteful. When Virginia and I lived together we would often talk on the phone near the end of the day and at some point the conversation would include the following statement, “Do you have dinner plans? Because I want to use that squash/lettuce/mushrooms <insert any variety of vegetable here> before it goes bad…” And lest we forget dear readers, I once got a note from a banana, begging to be eaten!

My fruit/vegetable basket is overflowing as I was recently given a huge amount of veggies from a friend’s garden. So, determined not to let my produce rot before I could use it, I concocted the following dish last night.

I prepared a store-bought pasta dish. I think the one I chose was Garlic-Parmesan, but you can choose any to your liking, though I would suggest sticking with a white sauce. After the pasta and sauce were done I threw in some fresh spinach and sliced cherry tomatoes, mixing it while the pasta and sauce were still hot so the spinach wilted a bit. Voila! Dinner that is easy, and contains two servings of veggies! You carnivores could even top it with some grilled chicken. Enjoy!

  2. I never understood the desires of that banana. You’d think it would have rather wanted to die peacefully than to be devoured by a carnivore. Huh…

    I’m making D a whipped up dinner tonight from my veggies. :)
